Beet, Cabbage and Parsley Date Salad with Sumac Dressing

About the Recipe

Ingredients

Salad

2 raw beets, grated on cone #2

2 cups red cabbage, grated on cone #2

1/3 cup Medjool dates, pitted and chopped

1 bunch parsley and/or mint, finely chopped

Optional 1 carrot grated ono cone #2


Sumac Dressing


1/2 cup extra virgin olive oil

1/4 cup freshly squeezed lemon juice

Optional 1 teaspoon (maple syrup) - sometimes I add a little orange juice

2 teaspoons sumac

1 teaspoon salt

1/2 teaspoon garlic powder

1/2 teaspoon cumin

1/4 teaspoon ground black pepper


Instructions


Add everything to a small mixing bowl, and whisk until combined. You can also add everything to a mason jar, screw on the lid, and shake to combine.
