Ingredients
2 lbs zucchini, 6-7 diced, cone 3
1 onion thinly sliced, cone 2
2 garlic cloves minced, cone 1
1 cup cashews soaked
1 bunch basil leaves
Preparation
In 7 quart roaster cook onion and garlic in a little oil or broth cook over medium heat until soft.
Add diced zucchini cover with 1/2 cup of water, bring to a simmer medium click low until zucchini is soft easily pierced by a fork.
Add cooked zucchini, soaked cashews, basil and remaining water to blender in 2 batches,
Season to taste with salt and pepper.
