Ingredients

  • 2 lbs zucchini, 6-7 diced, cone 3

  • 1 onion thinly sliced, cone 2

  • 2 garlic cloves minced, cone 1

  • 1 cup cashews soaked

  • 1 bunch basil leaves

Preparation

  1. In 7 quart roaster cook onion and garlic in a little oil or broth cook over medium heat until soft.

  2. Add diced zucchini cover with 1/2 cup of water, bring to a simmer medium click low until zucchini is soft easily pierced by a fork.

  3. Add cooked zucchini, soaked cashews, basil and remaining water to blender in 2 batches,

  4. Season to taste with salt and pepper.
